Gluten-Free Summer Pasta Salad + Recipe


My friend Guchi was kind enough to share here easy and quick summer pasta salad recipe with us

Recipe

 Organic, gluten-free summer pasta salad with homemade Caesar vinaigrette

Ingredients:
1. 3/4 cup of dry tri-color pasta
2. 1/2 red, yellow and green bell peppers
3. 1/2 onion, diced
4. 1/2 cup broccoli
5 Handful dress parsley
6. 3/4 cup of extra virgin olive oil
7. 1/4 cup apple cider vinegar
8. 1/2 fresh squeezed lemon juice
9 spices: cayenne pepper, salt, allspice, Rosemary, cilantro, garlic ( to desired taste)

Process:
1. Boil pasta until well done; drain and run under cold water.
2. Chop vegetables
3. Make vinaigrette by combining oil, vinegar, lemon juice and spices.
4. Mix pasta and vinaigrette in large bowl.
5. Enjoy with lemon infused mineral water. :)

Feel free to substitute dry herbs/ spices with fresh.
